Saw on the BBC a day or so ago northwest China I guess (men where wearing the white caps)...saying they were selling sheep to Beijing restaurants for $400 per head!? Don`t know about Wales, but in Australia the lamb market price is always very volatile.
The prices show on the link are cents / Kg cwt(carcass weight). AUD around 31 to the Baht.
Heavy end lamb is around 40 / 45 Kg live weight, so one lamb could be around AUD$180.

We used to breed Black Welsh Sheep and the lambs used to sell for about £35 a head in the early nineties - they are a small breed though but have a delicious taste.

My take on this is (cottage pie) is - It is NOT a dish made from sunday dinner leftovers , it stands on its own merit as a very tasty savoury piece of haute cuisine, minced beef and onions with seasoning, served under a covering of mashed potatoes.. effin delicious.
Better than most of the offerings on a menu de France.
