Pharvey, you're our sheep expert on here. Saw on the BBC a day or so ago northwest China I guess (men where wearing the white caps)...saying they were selling sheep to Beijing restaurants for $400 per head!? I think that's a high price for an entire beef steer, forget about a fricking sheep!. Seems demand and supply are way out of sync. What is a normal price for 1 head of sheep in Wales? Pete

Don`t know about Wales, but in Australia the lamb market price is always very volatile.
The prices show on the link are cents / Kg cwt(carcass weight). AUD around 31 to the Baht.
Heavy end lamb is around 40 / 45 Kg live weight, so one lamb could be around AUD$180.

For all those "Shepherds Pie" fanatics, notice Cottage Pie is made with BEEF!!

Has anybody tried to make it using pork, or does the pork available here have too much fat in it?

I was wondering the same thing the other day. The answer is definitely yes. This is a bit of fancy version, but there are plenty more out there.
Italian-style shepherd's pies

Give classic shepherd's pie an Italian twist by adding passata, oregano, parmesan and a pinch of fresh parsley.
Preparation Time

20 minutes
Cooking Time

60 minutes
Ingredients (serves 4)

5 (about 1kg) coliban potatoes, peeled, coarsely chopped
1 tbs olive oil
1 brown onion, halved, finely chopped
1 carrot, peeled, finely chopped
1 celery stick, ends trimmed, finely chopped
2 garlic cloves, crushed
300g pork mince
300g veal mince
1 x 400g can diced tomatoes
250ml (1 cup) passata (tomato pasta sauce)
1 tsp dried oregano
2 tsp olive oil, extra
35g (1/3 cup) finely grated parmesan
1/3 cup coarsely chopped fresh continental parsley
Names for pork-based cottage pie should be plenty and varied...

We used to breed Black Welsh Sheep and the lambs used to sell for about £35 a head in the early nineties - they are a small breed though but have a delicious taste.

In reply to Bruce and Image - WTF are you doing in Thailand ?? Get a life you sad sops and stop being offended by piffling little postings about effin cottage pie !
My take on this is (cottage pie) is - It is NOT a dish made from sunday dinner leftovers , it stands on its own merit as a very tasty savoury piece of haute cuisine, minced beef and onions with seasoning, served under a covering of mashed potatoes.. effin delicious.
Better than most of the offerings on a menu de France.
