Does anyone else rinse their rice before cooking?

Does anyone else rinse their rice before cooking?

Post by 404cameljockey »

I buy from Lotus usually, in plastic bags. It's obviously been washed and impurities like bran etc. removed, but rinsing it a few times removes more starch. It looks like a lot in the first rinse and a little more each time after.

Also I read that rice contains a lot more arsenic than other vegetables, because it's grown in waterlogged conditions. Rinsing a few times and discarding the water each time must be more healthy?

PS - I just read the following and am happy I take the time to rinse. I take multivitamins daily and aren't bothered about washing them out of my rice!

Well, that explains why I'm growing a sixth toe.

Seriously, if you're rinsing with city water you're defeating the purpose.

Doesn't everybody have 6 toes?

Probably right, but you could be diluting any poisons, and hopefully the boiling process will kill any other nasties.

In Thailand my wife rinses first a couple of times using tap water and then a final rinse with bottled water and of course cooked using bottled water. In the UK I just use tap water to rinse and cook.

We rinse once (tap water) like it says on the pack. Then cook using bottled water.

Apparently Thai Jasmine rice has least arsenic https://www.bangkokpost.com/business/ge ... st-arsenic

No mention of all the other stuff that may or may not be present.

I'd hate to claim any knowledge of cooking but I've always rinsed rice a couple of times before putting on the rice cooker.
Doesn't it stop it being sticky?

Apparently not. I thought so too, but I've been reading otherwise today. I think the degree of stickiness is only down to the type of rice.

Always been taught to do the same - not doing so in front of the LHG would risk somewhat of a b*ll*cking it has to be said.....

Also chilling or freezing before cooking fried rice

My partner rinses rice before cooking and she worked on her sister in laws food stall in Bangkok for seven years.

The dear LHG who must be obeyed, at least by me, says - you must have good quality rice, but the BIG issue is the amount of water you use, keep covered and DON'T Stir.... She never uses a Rice Cooker - a heavy pan is far better apparently. :thumb:

Oh, and you MUST begin with COLD water - none of this trying to cut things short starting with boiling water....

Just saying :D

[EDIT] "Covered was referring to both the pan and the rice. Rince the rice, cover with water (0.5-1cm), bring to the boill, turn down to (very) low simmer and cover the pan..... Tried, tested and beautiful :thumb:

Cooking rice is like so many things - lots of different methods that people will swear by, but as long as your method suits you, then it’s fine!!

Not at all - I cook Indian Pilao rice in a microwave and it comes out as good as I’ve had in many Indian restaurants- it’s not a straight forward cook at full power for 10 minutes and has a number of processes (including washing the rice three times, drying it and dry frying in a little oil with spices).

Maybe not a traditional method but the end result is very goodImage
