Do you know where in Hua Hin it is possible to buy sushi grade fish?

Probably go to the docks in the early morning when the fleets come in if local species will work for you.

Both Villa Market and Macro Hua Hin appear to have that grade of salmon and tuna.
My brain is like an Internet browser; 12 tabs are open and 5 of them are not responding, there's a GIF playing in an endless loop,... and where is that annoying music coming from?

Yes, but if you can control the quality from the start ( a live, or just freshly killed ) then you can freeze. We do often here in California after dive trips :cheers:
