Enough batter recipes on t'internet, I regularly did my own before I came here but not too successfully I must say!

Beer batter for sure! Might try making it with London Pride or maybe even a stout.

I popped in last night to The new Bar Tender for the weekly fix of fish and chips for me and the missus-she's Thai but loves F&C, also took home a couple of pasties, still as good as ever. I tried to quiz Pin on the recipe but she wouldn't give anything away!
Ron and Pin are still providing although the place is not fully open, I usually call in if I'm passing or give Ron a phone call and place my order.

TWO PERSONS
FOR THE BATTER
4 TABLESPOONS PLAIN FLOUR, PLUS EXTRA FOR DUSTING
1 TEASPOON BICARBONATE OF SODA
3.5 fL oz COLD WATER
JUICE OF 1 LEMON
SALT & PEPPER

Place flour and bicarbonate of soda in a bowl and whisk in the water to make a smooth batter. Stir in the lemon juice and a pinch of salt. Dip dusted cod into the batter shaking off any excess, and deep fry for 5 mins until batter is golden and fish cooked

I've had some fish & chips where the batter has been golden but the fish wasn't quite cooked in the centre. I don't think it was because the fish was still partially frozen, but simply a thick piece of fish.

To avoid the fish being undercooked, you think a reasonable idea to blanch the fish for a few seconds in boiling water, .....or.....15 seconds or so in the microwave before dipping it in the batter? Pete :cheers:

:shock: There are parts of England where you'd be stoned to death, flung from a cliff or chopped up for fish bait for making a suggestion like that! :laugh:

Consider yourself lucky. The last time I had fish & chips, the piece of fish was about an inch thick, or so it seemed until I cut into it, only to discover paper-thin piece of soggy fish inside the batter. Basically batter & chips rather than fish & chips. Never mind though, at least my dogs enjoyed it. :thumb:

Well folks, I'm home from Blighty and after Yorkshire roast beef etc (in Yorks) , Welsh lamb shank (in Cardiff), Caribbean Jerk chicken and ribs (google Negril), meat and potato pies and even a ploughman's (in London) I missed my F&C. Tried it in London but sadly lacking

Soooooooooooo....decided last night to go and see/insult good old frosty face Barry in Victoria bar up soi 80. Decided on F&C plus REAL mushies with a pot of teas and bread and butter and I was home. Takes a lot to beat his fare

Always have a problem choosing though........F&C, Liver and bacon, Cottage pie, Ploughmans, Pies. All top whack and consistently great

Other views regarding my trip apart from food will be posted soon on a different thread
