The supplier I use for curing agent and sausage seasoning is http://www.sausagemaking.org/ based in the UK. Not sure if they do overseas deliveries but worth a try. When you look at their website you should be quite impressed with their range, which includes amongst other things professional smokers, but at a price!!pharvey wrote:Bacon looks superb DB - something I would love to have a go at myself. I've been searching the net to see if there's anywhere I can buy some pre-mixed dry rub online, but have come up blank. I would like to try and get a small amount sent to China - I can't see it being a real issue with customs/import as it's basically just dried spices (?)..... but you never know!!
So, if anyone knows of an online store.... please post the address/link.
On the smoker Siani, it's pretty simple to make one up, but as others have stated, I'd be concerned about temperature control...... certainly the method DB uses is the easier option and the one I would go with (bit of a lazy g*t you know).

Re: Meat Curing
No - it's a domestic process. The meat can of course be smoked after cold curing but it is said to work very well without that.jingjoe wrote:is there no smoking involved?
surely after the week curing in the bag it will need to be smoked in a bbq or something similar
The method I found, which has already been tested by a friend, uses just salt, water and molasses (or black treacle) in a lidded container left in the fridge for 4 or 5 days, with a small plate on top of the meat just to keep it submerged. Then you just dry it off with a cloth, slice, and it is supposed to keep for up to 2 weeks.
(It's maybe worth noting that in the UK smoked bacon is less popular than plain cured.)

Thanks for the link DB - looks impressive. I've sent them a message to see if they can ship to China, so we'll see.
