On the smoker Siani, it's pretty simple to make one up, but as others have stated, I'd be concerned about temperature control...... certainly the method DB uses is the easier option and the one I would go with (bit of a lazy g*t you know :oops: ).

The supplier I use for curing agent and sausage seasoning is http://www.sausagemaking.org/ based in the UK. Not sure if they do overseas deliveries but worth a try. When you look at their website you should be quite impressed with their range, which includes amongst other things professional smokers, but at a price!!

No - it's a domestic process. The meat can of course be smoked after cold curing but it is said to work very well without that.
The method I found, which has already been tested by a friend, uses just salt, water and molasses (or black treacle) in a lidded container left in the fridge for 4 or 5 days, with a small plate on top of the meat just to keep it submerged. Then you just dry it off with a cloth, slice, and it is supposed to keep for up to 2 weeks.
(It's maybe worth noting that in the UK smoked bacon is less popular than plain cured.)
